Spanish garlic chicken

Spanish garlic chicken is a basic, easy, and tasty recipe. It is a favorite dish of many people for their everyday meals since it does not require a large number of ingredients. Moreover, it is a traditional recipe, and because of the juiciness of the chicken, there is no question of why it has been popular for many years.

Preparation method for the Spanish garlic chicken

  1. Clean the chicken, removing the pieces of fat and skin. If you prefer the chicken crispier, you can leave a little skin. Season the chicken with salt and pepper.
  2. Heat the Spanish extra virgin olive oil in a casserole and add the unpeeled garlic. Then cook over medium heat, avoiding burning for 5 minutes, making sure they are soft, and remove from heat.
  3. Place the chicken pieces, bay leaf, thyme, and rosemary in a pot over medium heat for 15 to 20 minutes, ensuring they get fried. Turn the pieces around so that they burn, and make sure they get toasted on all sides.
  4. Once the chicken is ready, remove the excess oil and add the garlic from step 2 along with the wine. Continue cooking the chicken until the wine has completely reduced. If you think it is too dry, you can add chicken broth to complement it.
  5. Serve on a plate with some chopped parsley or cilantro, the previously chosen ingredients to garnish on top.
  6. Add the sauce left in the pot and enjoy!

Preparation method for the French fries

  1. Peel the potatoes and cut them into 1 cm slices. Then, cut each piece into sticks 1 cm wide and 5 cm long.
  2. Let them soak in a deep dish, to avoid oxidation, for about 15 minutes.
  3. Remove from the bowl, add a little salt, and mix. Then fry the potatoes in a frying pan with the Spanish extra virgin olive oil for 7 or 8 minutes over medium heat.
  4. As an additional step, if you prefer the potatoes crispy, you can transfer them to another frying pan with extra virgin olive oil over high heat for an extra 5 minutes.
  5. Remove the potatoes and let them rest on absorbent paper towels on both sides for 2 or 3 minutes.

8 cloves of garlic

1 sprig of thyme 

300 ml. white or sherry wine

75 ml. of extra virgin olive oil from Spain
