Grilled salmon with asparagus recipe

We're big fans of salmon. We can't live without it, and no wonder why! Salmon is one of the most popular fish in the world, due to its incredible flavor and countless health benefits. It is very versatile, and paired with a splash of Extra Virgin Olive Oil from Spain and a tasty garnish, it becomes a five-star dish. With all that flavor, of course it’s at the top of everyone's list.

A simple recipe in the oven. What are you waiting for?

Preparation:

  • Prepare the yogurt sauce by mixing a tablespoon of extra virgin olive oil from Spain, the yogurt, lemon juice, salt and dill in a bowl, beat together with a whisk and set aside until ready to serve.
  • Using a peeler, create thin shavings of asparagus (you can save a few of the tips for garnish). Sauté them using two tablespoons of Extra Virgin Olive Oil from Spain, salt and pepper.
  • Brush the salmon with two tablespoons of Extra Virgin Olive Oil from Spain so it doesn't stick to the pan, brown it for around 5 minutes on the first side and 3 minutes on the other side, depending on the thickness of the fillets. To prevent the fish from breaking apart, flip it using a large spatula.

Presentation:

  • Serve the salmon with the shaved asparagus and yogurt sauce. If you want, you can also serve the tips along with the shavings.

The yogurt sauce goes perfectly with the salmon, and you can also use it to dress salads, vegetables, or even on sandwiches. Try this sauce with carrot or celery sticks for a healthy snack any time of day. It is also delicious with Fried Green tomatoes.

We love this recipe, as it gives asparagus a fun new twist.

This isn't our only recipe with asparagus, we also have the rolled omelet stuffed with prawns, salad with bright cherry vinaigrette and whole-wheat toast with eggs fried in EVOO with asparagus but the difference here is the creative presentation. Imagine the look on your guests' faces when they see that asparagus nest! Use this trick with other dishes for a modern plating technique.
