Lime is the quintessential refreshing taste of summer and sunshine.

Did you know that there is a variety of smaller, light yellow limes that grow with a thinner skin and are prized for being tart and super aromatic? They are called Key limes and are named after the Florida Keys, but are grown throughout Florida and in some areas of California.

Prepare a delicious key lime pie with EVOO from Spain and fresh limes for the best flavors and textures.

How to make Lime pie with EVOO from Spain:

  1. Preheat the oven to 350ºF.
  2. Next, take your favorite cookies and crush them until you get the optimum amount. Once you have the crumbs, mix them with the three tablespoons of EVOO. Stir until well integrated.
  3. Spread the cookie dough in a cake pan and bake for 15 minutes. After 15 minutes, let it cool.
  4. To make the filling, mix the sweetened condensed milk, lime zest, lime juice, a pinch of salt and the 2 egg yolks. It should be a thick batter. Then pour it into the cooled pie crust and leave it in the refrigerator for 2 hours.
  5. For the topping, whip the heavy cream in a cold bowl for 30 seconds. Then add the powder and continue beating for 45 seconds more.
  6. Just add the frosting to the cake and enjoy!

  • 3 tablespoons extra virgin olive oil from Spain
  • One 15 oz can of sweetened condensed milk
  • 1 tablespoon lime zest
  • 1/2 cup lime juice
  • Salt
  • 2 egg yolks
  • 1 cup heavy cream
  • 3 tablespoons powdered sugar
  • 1 tablespoon of lime juice
