Wrinkly potatoes with green and red garlicky sauce recipe

Preparation:

  1. Put the potatoes in a pan, cover with water, add a generous amount of salt and leave to cook until the water has almost evaporated. To ensure the potatoes are well cooked, poke them with a toothpick and, if they are soft, remove them.
  2. To make the green sauce, mash the garlic with the cumin and some coriander leaves with a pestle and mortar. When it becomes a paste, add the Extra Virgin Olive Oil from Spain and stir well. Season to taste and add the potatoes.
  3. To make the red sauce, mash the garlic with the cumin with a pestle and mortar. Once mashed, add the cayenne pepper and the paprika. To finish, add the Extra Virgin Olive Oil from Spain and a dash of wine vinegar. Season to taste and serve with the potatoes.
