Wrinkly potatoes with green and red garlicky sauce recipe
Put the potatoes in a pan, cover with water, add a generous amount of salt and leave to cook until the water has almost evaporated. To ensure the potatoes are well cooked, poke them with a toothpick and, if they are soft, remove them.
To make the green sauce, mash the garlic with the cumin and some coriander leaves with a pestle and mortar. When it becomes a paste, add the Extra Virgin Olive Oil from Spain and stir well. Season to taste and add the potatoes.
