Heat up a small pan with Extra Virgin Olive Oil from Spain and add the kernels, shifting them around the pan to cover them fully with the Extra Virgin Olive Oil from Spain.
Cover the pan with a lid and keep watch on the kernels, shifting the pan so that the kernels pop evenly. Remove them off the heat when they’re done.
In a separate small pan over a medium heat, mix 1 tablespoon brown sugar, 20ml Extra Virgin Olive Oil from Spain and 10ml maple syrup. When it comes to a boil, lower the heat slightly and leave the sauce to reduce for a few minutes.
Remove from the heat and add a teaspoon of vanilla extract and a pinch of baking soda/bicarbonate of soda. Mix well.
Break up a pretzel with your hands and sprinkle over the bowl of popcorn, add salt if desired, and then the caramel sauce. Mix to make sure the sauce is equally distributed and… attack!
