How to make zucchini and cheese bread:

  1. Preheat the oven to 350° F.
  2. In a bowl mix the flour with the baking powder, baking soda, sugar, and salt.
  3. In another bowl, beat the milk and egg. Add the Olive Oil from Spain and mix well.
  4. Slowly add the liquid mixture to the dry mixture, stirring constantly.
  5. Add the zucchini, onion, and cheese and mix well.
  6. Grease a loaf pan with Olive Oil from Spain.
  7. Pour the mixture into the pan. Bake for approximately 60 minutes. Insert a toothpick; if it comes out clean, the bread is ready.
  8. Allow to cool for 10 minutes before removing from the pan.
  9. Enjoy warm.

  • 3 eggs
  • ½ cup Olive Oil from Spain
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp black pepper
  • 1 pinch of salt
  • 1 tbsp sugar
  • 7 oz. Galician cheese, sliced (can substitute cheddar cheese)
  • 6 tbsp milk or soy milk
  • 5 oz. zucchini, finely diced
  • 5 oz. onion, chopped
