These chicken and avocado hamburgers are the perfect way to add some meat and vegetables to your family’s meals. They’re sure to surprise both the little ones and the adults in the family.

Did you know that avocado is actually a fruit? It’s the fruit of the Persea americana tree, and inside you’ll find a seed!

How to make chicken and avocado hamburgers:

  1. In a bowl, combine the chicken, avocado, garlic, breadcrumbs, chili pepper, salt, and pepper and mix well.
  2. Make small, uniform balls and shape into hamburgers. Try to make them uniform in size so the cooking time will be the same.
  3. In a frying pan, heat 2 to 3 tablespoons of Olive Oil from Spain and cook the hamburgers for 3 to 4 minutes per side over medium heat. They should be golden brown.
  4. In another frying pan, heat 2 tablespoons of Olive Oil from Spain and sauté the asparagus and tomatoes, adding salt and pepper to taste.

Serve the hamburgers with the asparagus and tomatoes.

If you follow a flexitarian diet or prefer to prepare this recipe with fish instead of meat, you can substitute monkfish for the chicken. The hamburgers will be just as delicious. Make them however you like!

You can also make a vegetarian option by substituting tofu, seitan, or Spanish rice for the chicken. Choose your favorite or combine them however you like!

  • 1 lb. ground chicken
  • 5 tbsp Olive Oil from Spain
  • 1 ripe avocado, diced
  • 1 clove garlic, minced
  • ½ cup panko breadcrumbs or ground almond
  • 1 chili pepper, minced (optional)
  • Salt and pepper
  • One bunch of green asparagus, cut into 1-to-2-inch pieces
  • 7 oz. cherry tomatoes, halved
