In a bowl, mix 90ml of Extra Virgin Olive Oil from Spain with the coconut milk, lemon zest and sugar.
In another bowl, mix 80g of flour with the salt and baking powder. Combine this mixture with the coconut milk mixture.
Next, combine the remaining 10ml of Extra Virgin Olive Oil from Spain and 20g of flour in a small bowl. Grease the sides of special cake pop silicone moulds with the mixture.
Fill the holes halfway with batter, then close the other half of the mould.
Heat the oven to 170ºC (325ºF) and place the mould in the oven for 20 minutes. Once the cake balls have baked for 20 minutes, remove them from the oven and let them cool for 24 hours.
Place a stick in each cake ball, and now they are ready to be decorated.
For the decoration:
Cover the cake balls with fondant, being careful not to leave any lumps. You can also create different shapes using the fondant and place them on top of the cake pop.
The only limit is your imagination. There are an infinite number of ways to decorate your cake pops: with dessert toppings, melted chocolate, icing sugar, caramel... How are you going to decorate yours?
