  1. Start by thoroughly cleaning the potato skins, broccoli stems, and cauliflower leaves.

  3. In a large skillet, heat the extra virgin olive oil from Spain and add the cubes of stale bread. Toast until they are golden and crispy, then remove and set aside.
  4. In the same skillet, add a little more Spanish extra virgin olive oil if necessary and sauté the finely chopped garlic cloves until fragrant.
  5. Incorporate the potato skins, broccoli stems, and cauliflower leaves, sautéing until they are tender and slightly golden.
  6. Season with salt and pepper to taste.
  7. Return the toasted bread cubes to the skillet with the vegetables, mixing well to integrate the flavors.
