How to make peach cobbler:

  1. Preheat the oven at 350ºF.
  2. Peel and cut the peaches into slices approximately one finger thick. The peaches should be at their optimum point of ripeness, do not use unripe peaches.
  3. Fill the entire surface of the baking pan with peaches. The idea is to form a base with several layers of peaches and let them cook in their own juice, so we recommend not using a pan that is too big or you will need many more peaches.
  4. Squeeze the juice of half a lemon over the peaches. If you have only been able to use peaches that were a bit unripe, sprinkle some brown sugar on them before adding the lemon.
  5. For the topping, sift the flour in a bowl and add the salt, sugar, egg (previously whisked) and the Spanish EVOO.
  6. With a spoon or a fork, mix all the ingredients of the dough. It is important to do it by hand because we want it to have a rough, sandy consistency.
  7. Place this dough on top of the peaches, covering them completely. This is important because it will make the fruit cook inside.
  8. Bake on top and bottom at 350ºF for about 35 minutes, until the topping looks crispy and golden. At this point, turn off the oven and leave the peach cobbler inside the oven for 10 more minutes.
  9. Once served, you can have it with a scoop of vanilla ice cream.
