Chocolate Brownies

Ingredients:

  • 200g of chocolate
  • 1/2 cup of Spanish extra virgin olive oil
  • 3 eggs
  • 1 cup of sugar
  • 1/2 cup of gluten-free flour
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla essence

Preparation:

  1. Preheat the oven to 180°C.
  2. Melt the chocolate together with the Spanish extra virgin olive oil in a double boiler.
  3. In a separate bowl, beat the eggs with the sugar until you get a creamy mixture.
  4. Add the melted chocolate and mix well.
  5. Incorporate the gluten-free flour, salt, and vanilla essence. Mix until you get a homogeneous batter.
  6. Pour the batter into a greased square baking pan and bake for approximately 25-30 minutes.
  7. Let it cool before cutting into individual portions and servin

 

Gluten-Free Apple Pie with Spanish Extra Virgin Olive Oil

Ingredients:

  • 3 peeled, seedless apples, sliced
  • Juice of half a lemon
  • 1 cup of gluten-free flour
  • 1/2 cup of sugar
  • 1/2 cup of Spanish extra virgin olive oil
  • 2 eggs
  • 1 teaspoon of gluten-free baking powder
  • 1 teaspoon of vanilla essence
  • A pinch of salt

Preparation:

  1. Preheat the oven to 180°C.
  2. In a bowl, mix the apple slices with the lemon juice to prevent them from oxidizing.
  3. In another bowl, beat the sugar, Spanish extra virgin olive oil, and eggs until smooth.
  4. Add the gluten-free flour, baking powder, vanilla essence, and salt. Mix until you get a homogeneous batter.
  5. Pour half of the batter into a greased pie pan.
  6. Arrange the apple slices on the batter and then cover with the remaining batter.
  7. Bake the pie for approximately 40-45 minutes or until it turns golden and is cooked in the center.
  8. Let it cool before unmolding and serving.

 

Gluten-Free Olive Oil Muffins

Ingredients:

  • 2 cups of gluten-free flour
  • 1 cup of sugar
  • 1/2 cup of Spanish extra virgin olive oil
  • 3 eggs
  • 1/2 cup of gluten-free milk
  • 2 teaspoons of gluten-free baking powder
  • Lemon or orange zest (optional)

Preparation:

  1. Preheat the oven to 180°C.
  2. In a bowl, mix the gluten-free flour and baking powder.
  3. In another bowl, beat the sugar, Spanish extra virgin olive oil, eggs, and milk until smooth.
  4. Add the lemon or orange zest, if desired, and mix well.
  5. Gradually incorporate the flour mixture and mix until you get a homogeneous batter.
  6. Pour the batter into muffin molds, filling each mold about 2/3 full.
  7. Bake for about 15-20 minutes or until the muffins are golden and firm to the touch.
  8. Let them cool before unmolding and savoring.
