Fruits, vegetables and Olive Oils from Spain for your healthiest summer yet

The sun, the heat, hydration problems and taking part in more outdoor activities… summer can be a testing time for your skin. And what could be better than a gazpacho in summer? A very refreshing dish that’s brimming with vitamins A and E. Whether you eat it from a soup bowl or drink it from a glass, gazpacho is a light culinary offering that will help to make those steamy summer days more bearable.

And that’s not all. If you’re looking to really pack in vitamins A and E, try out this fabulous 100% summer salad that’s so quick and easy to make.

All you need (for four people):

Ingredients:

  • 2 cucumbers
  • 2 large tomatoes
  • 1 red pepper
  • 200g mushrooms
  • 1 garlic clove
  • 1 small tin anchovies
  • Some basil leaves
  • 100g Gruyère cheese
  • 2 boiled eggs
  • Black pepper to taste
  • 50ml Extra Virgin Olive Oil from Spain
     

And that there’s no more excuses, we’ll give you the steps to make this delicious salad in no time at all.

First: Wash all the vegetables and slice them, along with the eggs and cheese.

Second: Make the dressing. Put the finely-chopped garlic, anchovies, a grind of pepper, the basil leaves and a generous glug of Extra Virgin Olive Oil from Spain in a blender. Blend for a few seconds and then drizzle over your salad with a smile!
