In March, we receive the spring equinox, which allows us to celebrate leaving behind winter, and especially the cold weather. That is why we have prepared some ideas for you to take advantage of seasonal ingredients and adapt them to the fresh cravings that come with warmer weather.


Orange and strawberries salad

What better way to begin than with a salad recipe as a starter? If when you think of spring, fruits might come to your mind, this will be your perfect recipe. 

We have the ideal salad to take advantage of the end of the cold season of oranges by the side of the beginning of the strawberry season.


Ingredients

  • 1 Orange
  • 8 strawberries
  • 75g Endive mix
  • 4 Radishes
  • 100g of peeled sunflower seeds
  • Extra virgin olive oil from Spain
  • Apple vinegar
  • Feta cheese to taste
  • Salt


Preparation method

  1. Peel the orange and separate its segments. Proceed to place them in a bowl with the strawberries in an interspersed way.
  2. Wash the salad and integrate it into the center of the selected container.
  3. Slice the radishes and serve them on top of the salad.
  4. Select the desired amount of feta cheese and crumble it over the salad.
  5. Add salt, a splash of apple cider vinegar, and another splash of extra virgin olive oil from Spain.
  6. Add the sunflower seeds and serve the salad.


Artichoke roses with Iberian ham

The end of artichoke season is close, so we have brought a spring recipe to take advantage of it. In addition, the beauty of simulating roses will be a perfect allusion to this season.


Ingredients

  • Extra virgin olive oil from Spain
  • 16 Artichokes
  • 16 Thin slices of Iberian ham
  • Salt 
  • Pepper


Preparation method

  1. Wash the artichokes, without removing the skins, and cook them in water for 10 minutes until white in color. Let cool in water and ice. Drain artichokes once cooled.
  2. Remove stems and large leaves from the artichokes. Proceed to cut the buds in half, trying to form a flower.
  3. Open the leaves and crush them lightly with your hands to shape the flower. 
  4. Heat a frying pan with a stir of extra virgin olive oil from Spain. Place the artichokes face down and cook until golden brown. 
  5. Turn the artichokes to brown them. You can add more extra virgin olive oil from Spain if necessary.  
  6. Open the artichoke hearts. Then, roll the Iberian ham into a rose shape, and add it over the artichokes.


Baby broad bean salad with tuna belly

Fresh fava beans are available in March, since they are sowed in the winter. This season does not last many months, so we recommend you start working on the recipe and enjoy it.

However, remember that you can always use canned beans if it becomes difficult to get fresh ones.


Ingredients 

  • 500 g of baby broad beans with pods or 150 g canned
  • 5 Radishes
  • 50 g of tuna belly
  • Chives
  • 1 Lemon
  • Pepper
  • Salt
  • Extra virgin olive oil from Spain


Preparation method

  1. Remove the beans from the pods and cook them for 1 minute in boiling water. Then, let them drain and cool in cold water.
  2. Wash the radishes and cut their stems. Proceed to slice it into thin pieces.

Mix the radishes with the beans. Afterward, serve it in the designated serving bowl.

  1. Drain the oil from the tuna belly and serve a portion with the vegetables. 
  2. Pour in a small bowl a tablespoon of extra virgin olive oil from Spain with a squeeze of lemon juice, pepper, and salt to taste. Serve over the tuna belly.
  3. Garnish and season with a touch of chopped chives to taste.
