Mix all ingredients in a robot coupe until smooth, let sit for 5 minutes.
On med heat in a pan add Extra Virgin Olive Oil from Spain. Using a spoon, scoop out and place into pan quarter sized wads of the mix.
Let cook for about 3 minutes on one side before flipping and smashing slightly. Continue to cook on the other side for about 3 more minutes.
Pull from oil and set on towel to rid of excess olive oil.
