Preheat the oven to 350º. While it’s heating, slide each peeled potato over a mandolin slicer so that the pieces are cut very thin.
We're going to need two baking sheets. Grease each one with a tablespoon of Extra Virgin Olive Oil from Spain and rub the garlic over both surface. Make sure to press the garlic firmly into the baking sheet so that the garlic flavour sticks to it. Place the potato slices on the baking sheets.
Once the oven has warmed up, place the baking sheets inside for five minutes. Take the sheets out and turn the potatoes over. Season to taste and return the potatoes to the oven for ten more minutes.
Remove the baking sheets, turn the potatoes over again and then let them bake for a further ten minutes. Repeat this process until all the potatoes are golden.
