A Fresh and Flavorful Salad W  a Spanish Twist

Sweet, savory, and full of texture, this Pear & Blue Cheese Salad brings together fresh greens, juicy pears, creamy blue cheese, and crunchy candied pecans.

A homemade vinaigrette featuring Extra Virgin Olive Oil From Spain adds richness and balances the sweetness of the fruit with the tanginess of the cheese. It's a refreshing dish that's perfect for sharing at your next gathering.

Instructions

  1. Prepare the dressing. In a small bowl, whisk together 6 tablespoons of Extra Virgin Olive Oil From Spain, sherry vinegar, Dijon mustard, fresh thyme, sugar or honey, and citrus juice. Season with salt and pepper to taste.
  2. Candy the pecans. Place the pecans and sugar in a skillet over medium heat. Stir frequently until the sugar melts and coats the pecans. Add a pinch of cayenne pepper, if desired. Once the sugar turns caramel-colored, remove from heat and stir in 1 teaspoon of Extra Virgin Olive Oil From Spain.
  3. Let the pecans cool. Transfer the candied pecans to a parchment-lined baking sheet, separate them carefully, and allow them to cool completely before breaking them apart.
  4. Assemble the salad. Divide the field greens among serving plates or arrange them in a large salad bowl. Add the sliced pear, crumbled blue cheese, and candied pecans.
  5. Add the finishing touches. Drizzle with the prepared dressing and finish with the remaining tablespoon of Extra Virgin Olive Oil From Spain.
  6. Serve and enjoy! Toss gently if desired and serve immediately.

Serving Suggestions

Enjoy this salad as a refreshing starter or pair it with roasted meats, grilled chicken, or other dishes for a balanced meal. Its combination of sweet fruit, creamy cheese, and crunchy nuts makes it an excellent addition to any gathering.

Storage Tips

For the best texture, assemble the salad just before serving. The dressing can be refrigerated separately in an airtight container for up to 3–4 days. Store the candied pecans in an airtight container once completely cooled. Keep the greens, cheese, and pear separate until ready to serve.
