Today we are here to present the easy-to-make sponge matcha mousse cake with extra virgin olive oil from Spain that is prepared surprisingly well in a frying pan.
If you do not feel like turning on the oven or you simply do not have one at home, then, this recipe is ideal for you. This recipe is made in a similar way as mug cakes or cupcakes in a microwave, which is very practical also in a frying pan.

Preparation method for the matcha mousse

Before making the matcha cake with extra virgin olive oil, you would need to prepare the matcha mousse beforehand, to compliment the matcha cake. To make the matcha mousse, you would need to do the following:

  1. Add the 3 egg whites to a mixer or a large bowl if using a hand mixer. When the whites turn white and start to stiffen, add ⅓ cup of sugar and beat to stiff peaks. Next, add 1 tablespoon of matcha powder and mix to incorporate. Clean the mixer or hand whisk before continuing.
  2. Whip 1 cup of cold whipping cream in a clean mixer bowl or medium bowl. When the whipping cream begins to stiffen, add ⅓ cup sugar and the vanilla. Whisk until stiff peaks form.
    Fold whipping cream into matcha mousse ⅓ cup at a time until incorporated.
  3. Cover and refrigerate for at least 1 hour and up to 4 days before inserting it on the cake.

Preparation method for the matcha cake

  1. The egg whites and yolks should first be separated. We whiten them by beating them with sugar.
  2. Yogurt and extra virgin olive oil from Spain should be added in batches and thoroughly combined.
  3. The matcha tea, salt, baking powder, and flour should all be sifted together.
  4. However, we beat the egg whites until they were firm.
  5. After incorporating the dry ingredients, carefully add the egg whites while wrapping them around the mixture.
  6. Oil the bottom of the pan and heat it.
  7. Fill the container no more than halfway with the mixture, then cover.
  8. Cook it for around 20 minutes on low heat. A toothpick can be used to check the food's doneness. Consider the quantity of dough and the dimensions
  9. As the last step, let it cool down and add your prepared matcha mousse on top for a richer taste, or you can even cut the cake in half and spread the mousse in the middle.

  • 4 medium eggs
  • 100 g sugar
  • 75 g natural yogurt
  • 50 g extra virgin olive oil from Spain
  • 10 g matcha tea (to taste)
  • 140 g pastry flour
  • 1 tablespoon of baking powder
  • 1 pinch of salt
  • Red berries for garnish
  • Fresh mint

For the matcha mousse

  • ⅔ cup sugar divided into ⅓ and ⅓.
  • 1 tablespoon culinary grade matcha powder.
  • 3 egg whites
  • 1 cup cold heavy cream
