Mayonnaise recipe

A jar of mayonnaise can run you up to five dollars at the market. Why spend so money on premade mayonnaise containing preservatives when you could make it fresh at home with ingredients you likely already have? This simple sauce is loved by many, some people use it on just about anything. From hamburgers, to hot dogs, to tuna, egg salad, there is no shortage of uses for mayonnaise. Preparation:

  1. Crack the eggs into a bowl and check to see that no bits of shell have fallen in.
  2. Put the eggs, the juice of half a lemon and a pinch of salt into the cup of a hand-held blender.
  3. Pour in half the Extra Virgin Olive Oil from Spain.

  4. Put the hand-held blender into the mixture gently and start off on a low speed.
  5. Keep the hand-held blender still until the mayonnaise starts to emulsify.
  6. When you can see it emulsifying, move the blender gently up and down and turn the speed up by 2 notches. Meanwhile, pour in the rest of the Extra Virgin Olive Oil from Spain in a steady stream until you have a completely smooth and even sauce.

  7. Season to taste.
