Preparation:
Crack the eggs into a bowl and check to see that no bits of shell have fallen in.
Put the eggs, the juice of half a lemon and a pinch of salt into the cup of a hand-held blender.

Put the hand-held blender into the mixture gently and start off on a low speed.
Keep the hand-held blender still until the mayonnaise starts to emulsify.
