Ingredient 911: The Wonders of Olive Oil

My name is Sonali Ruder, aka The Foodie Physician.  I’m a physician, chef and lover of delicious food!  On my blog, The Foodie Physician, I use my medical and culinary backgrounds to create recipes that are nutritious and full of flavor.  My Grilled Garlic Shrimp Skewers with Parsley Oil are the perfect summer grilling dish.  Easy to make and packed with flavor, this dish really showcases the versatility of Olive Oils from Spain.

  1. Soak the skewers in cold water for 20 minutes.
  2. Preheat a grill or grill pan to medium high heat.
  3. Mix the extra virgin olive oil, garlic, lemon juice, paprika, chili flakes, and salt together in a large dish.  Add the shrimp and toss to combine.  Marinate the shrimp while you make the parsley oil.

  4. Bring a large pot of water to a boil.  Add the parsley and cook for 10 seconds.  Immediately remove the parsley and transfer it to a bowl of ice water to stop the cooking process.  Drain the parsley and dry it on paper towels.
  5. Blend the parsley, extra virgin olive oil and salt in a high-speed blender until completely smooth.  Transfer to a bowl.  If desired, strain the parsley oil using a strainer.

  6. Slice the lemons into circles about ½-inch thick.  Cut the circles into semi circles.  Thread the shrimp and lemon slices onto the skewers, alternating them so that each skewer has 3 shrimp and 2 lemon slices.  Season them with a pinch of salt and pepper.
  7. Place the skewers on the grill and brush with any extra marinade.  Grill 2-3 minutes, then flip and cook another 2-3 minutes on the second side until done.  Remove from grill.
