Preparation method for the vegan meatballs

  1. Place the lentils in a bowl with water and let soak for at least 2 hours.
  2. Drain the lentils.
  3. Add them to a saucepan over high heat with water until they boil. Subsequently, lower the heat.
  4. Let them cook over medium heat until they are ready, about 50 minutes. 
  5. Add salt to taste.
  6. Meanwhile, cook the quinoa in a saucepan for 15 minutes with water or until it has absorbed the water.
  7. Let the quinoa rest for 10 minutes and dry completely with kitchen paper.
  8. Heat two tablespoons of Spanish extra virgin olive oil in a frying pan and sauté the onion, bell pepper, and garlic.
  9. Place the sautéed ingredients in a bowl and add the oregano, quinoa, lentils, and oats. 
  10. Mash the mixture in the bowl with the help of a fork until it forms a dough.
  11. With wet hands and the previous dough, shape the meatballs. Then place them in the refrigerator for one hour.
  12. In another frying pan, place two tablespoons of extra virgin olive oil from Spain and heat. Subsequently, cook the vegan meatballs in the skillet over medium heat for 12 minutes.

 

Preparation method for the sauce

  1. Drain cashews and add all the sauce ingredients except the flour and broth in a blender.
  2. In a large skillet, heat the sauce and gradually stir in the flour to thicken. 
  3. Incorporate the broth into the mixture and wait for it to boil.
  4. Finally, add the meatballs and cook for a few minutes. This step is essential for the vegan meatballs to take on the sauce's flavor.
  5. Garnish with a sprig of fresh parsley, and they are ready for you to enjoy!
