Grilled Garlic Shrimp Skewers with Parsley Oil
Makes 8 skewers
Ingredients:
Shrimp Skewers:
- ½ cup olive oil from Spain
- 6 cloves garlic, finely chopped
- 2 tablespoons fresh lemon juice
- ½ teaspoon sweet Spanish paprika
- ¼ teaspoon red chili flakes
- ¼ teaspoon kosher or sea salt
- 1 pound large shrimp (about 24 shrimp), cleaned and deveined
- 2 lemons
- Black pepper
Parsley Oil:
- 1 ounce (½ bunch) parsley
- ½ cup extra virgin olive oil from Spain
- ¼ teaspoon kosher or sea salt
- 8 long wooden skewers.
Directions:
- Soak the skewers in cold water for 20 minutes.
- Preheat a grill or grill pan to medium high heat.
- Mix the extra virgin olive oil, garlic, lemon juice, paprika, chili flakes, and salt together in a large dish. Add the shrimp and toss to combine. Marinate the shrimp while you make the parsley oil.
- Bring a large pot of water to a boil. Add the parsley and cook for 10 seconds. Immediately remove the parsley and transfer it to a bowl of ice water to stop the cooking process. Drain the parsley and dry it on paper towels.
- Blend the parsley, extra virgin olive oil and salt in a high-speed blender until completely smooth. Transfer to a bowl. If desired, strain the parsley oil using a strainer.
- Slice the lemons into circles about ½-inch thick. Cut the circles into semi circles. Thread the shrimp and lemon slices onto the skewers, alternating them so that each skewer has 3 shrimp and 2 lemon slices. Season them with a pinch of salt and pepper.
- Place the skewers on the grill and brush with any extra marinade. Grill 2-3 minutes, then flip and cook another 2-3 minutes on the second side until done. Remove from grill.
- Arrange skewers on a serving platter and drizzle some parsley extra virgin olive oil on top. Serve extra parsley oil on the side.
