Let's prepare the meat for your smash burger. In a bowl, knead the meat you have bought (we recommend you to choose a good quality meat, with good smell, colour and firmness) and add salt and pepper to your taste and whim. When you have finished kneading, make four meat balls with your hands, one for each hamburger.
Take it out of the griddle and grill it to perfection. Yes, very simple; on a griddle or, failing that, in a large frying pan, add several tablespoons of extra virgin olive oil from Spain and spread it with a cooking brush all over the surface. The EVOO will give the hamburger a little extra flavor that you will appreciate. It will be the key ingredient, the one that makes the difference.
Place each burger on the griddle and flatten it. Now let's give the meat just the right color. Use a medium high heat, depending on how you want the burger. If you want it redder on the inside (rare), you can set the heat higher, if you want it medium rare or even, set it to medium. It all depends on the taste of the person who is going to enjoy it. About two minutes on each side should be enough for the meat to be ready. Flatten it with the spatula just a little, to leave it very compact and juicy, but be careful not to press it too hard because you could leave it dry. Finally, allow the burgers to rest for at least 30 seconds after removing them from the heat, so that the juices redistribute.
Toast the buns and onion and assemble the burger. Brown the buns by toasting them for a few seconds. Then leave the onion on the griddle for a while over low heat with a tablespoon of extra virgin Spanish olive oil. Then assemble the hamburger with the tomato slice, the lettuce, the slice of cheddar cheese, the onion and finally the beef, once it has rested.
