Baby squid skewers with garlic and parsley

Ingredients (4 pax )

  • 8 baby squid
  • For the vinaigrette:
  • 200ml Extra Virgin Olive Oil from Spain
  • 4 garlic cloves
  • A bunch of parsley
  • 1 lemon
  • Salt
  • For frying the tentacles:
  • ½ litre Olive Oil from Spain
  • Flour

Baby squid skewers with garlic and parsley recipe

Preparation:

  1. Clean the baby squid, separate the bodies from the tentacles and thread them on a skewer. Keep the tentacles to one side.
  2. Season the tentacles and coat them in flour before frying them in hot Olive Oil. Brush oil on the skewers before placing them on the grill, turning them to ensure they cook on both sides.
  3. To serve, place the skewers on a plate and drizzle them with Extra Virgin Olive Oil vinaigrette and lemon juice. Add some garlic and parsley.
