A unique opportunity to discover the health benefits of Olive Oils from Spain and the qualities that make them so special. Olive Oils from Spain, with the collaboration of the Provincial Council of Jaén, will host a conference on October 4th in which health and gastronomy go hand in hand. It starts off with a workshop at 6:00 p.m. at the Instituto Cervantes of Chicago led by Dr. José María Ordovás, Director of the Nutrition and Genomics Laboratory at Tufts University in Boston. He will analyze the health benefits of the Mediterranean Diet from a truly novel perspective: its effect on our genes. The workshop will also include an introduction to Extra Virgin Olive Oil tasting by Teresa Pérez, Manager of the Spanish Olive Oil Interprofessional Organization.
